I used to have difficulty eating gluten because I was sensitive to it, but after starting the medication Madopar, I no longer have any problems. Is this common?

Interesting, but there does not appear to be anything in the medical literature suggesting that levodopa could reduce gluten sensitivity. Parkinson’s affects the gastrointestinal tract in several ways; constipation, for example, is common. Perhaps this helps you not react as much to gluten in some way.
